End of the Week Treat! V-day themed!

Happy Friday!
This week's End of the week treat = cookies!
Oatmeal Chocolate Chip M&M Peanut Butter Cookies, to be exact!!
With Valentine's Day M&Ms of course, because, well, you can never have too much love...right?

The base is made up of about half flour and half oats, and I decided to use whole wheat flour instead of all-purpose. Why? Why not?! Certainly can't call them healthy cookies, but might as well add nutritional benefits where I can!

High in protein and fiber, soft, chewy, and chocolaty! I'll take it! :)

Chocolate & Peanut Butter AND Coconut, Walnuts, & Chocolate...

Peanut butter, chocolate, oats, Reese's pieces, and dark chocolate chunks...what's not to love?! Soft, thick, chewy, flavorful, addicting, and perfect for any chocolate-peanut butter lover. They explode with peanut butter and chocolate flavor! They are truly my favorite and absolutely addicting!

I brought them into work at LivingSocial today! Excellent response. I'm glad everyone liked them as much as I do!

Oh, and did I mention they have zero calories? Ha, I wish. Only kidding. But they are made with all oats (no flour), more peanut butter than butter (healthy fat), and dark chocolate (antioxidants). Totally healthy, right? :) Enjoy!

The week before making the chocolate peanut butter cookies, I made these puppies and brought them into LivingSocial on my first day! They are oatmeal chocolate chip cookies with coconut & walnuts. Sweet treat = smiles. Yum!

My goal is to bake one treat per week! Feel free to send suggestions my way! rachellovesbaking@gmail.com

Happy Thanksgiving!

Thanksgiving!
What a perrrfect time for togetherness & baking! My annual Thanksgiving signature: Apple Pie.
Tried making a new recipe this time and it was DELISH! The key was turning the brown sugar mixture into a sauce, essentially a caramel sauce, and mixing it in with the apples. Then, after arranging the lattice top-crust, I poured more of the sauce over the top. Yummm. Perfectly sweet and amazing topped with vanilla ice cream (or frozen yogurt). No leftovers, which was sad, but at least that means it was enjoyed by my loving family! :)

On Friday I made these peanut butter oatmeal chocolate chip cookies, in the spirit of giving of course, for my two brothers to bring back to college with them! I brought some back to DC with me for my roommates too!

Next post: December!! Christmas cookies here I come!

Baking Update: yumyumyum

It's been a little while since I posted, but don't worry- I haven't stopped baking! My photos here aren't fantastic, but the treats were scrumptious! I brought 'em into work at Taste of DC!

Here's a little recap...

Oatmeal chocolate chip cookies. Classic.

Chocolate cookies with mint chips, dark chocolate chips, and peppermint pattie chunks. SO good. These were truly addicting.

And finally, fudgy peanut butter swirl brownies. I love anything and everything that combines chocolate & peanut butter, and these are no exception! I've made them before- always chocolaty, fudgy, peanut buttery goodness. YUM

Ok so this is a catch-up post for the things I've been making for everyone to enjoy during finals week!

These are my DELICIOUS homemade, fudgy, chocolate chunk brownies! There are also brownie-cookie bars too!

These are tasty, very healthy muffins. They are oatmeal and whole wheat, fat-free muffins. Some of them have apple butter in the middle. A delicious and nutritious part of a healthy breakfast :)!

And finally, this is homemade mac & cheese with breadcrumbs on top. So so tasty-- you'll never want the box kind again!

peanut butter chuck and oatmeal caramel

So I really wanted to bake for Pi Phi chapter and i wanted to make something tasty. I used Halloween candy in both of these. I made peanut butter cookies with crushed up chocolate-peanut butter "eyeballs" in them, and oatmeal cookies with chocolate-caramel "eyeballs" in them. both came out SO yummy!

Soo when I make cookies I usually freeze some of each batch, so that whenever I have somewhere to go, I can take the cookies out of the freezer and not arrive empty handed. So I had accumulated a few kinds, and decide it was time to bring them out. this was the first time I had made snickerdoodles in awhile, but they turned out soft and yummy- tasted kind of like fried dough (because of the cinnamon and sugar). Anyway, anyone who knows me knows that I LOVE variety, so I thought this was a good idea.

A little more 4th of July

So I really wanted to make a festive 4th of July cookie...What I came up with was my favorite oatmeal cookie base, and I mixed in almond joy pieces (blue, white, and brown), and also red m+ms haha. Came out pretty good I think :)

Oatmeal Peanut Butter Stuff Cookies

Do you like peanut butter? chocolate? oatmeal? soft flavorful cookies?

Then this is the cookies for you!
Around Easter time, I felt like making a unique cookie. In my room I had a bag of peanut butter cups, a bag of butterfinger eggs (aka Easter themed butterfingers), and ~ 1/4 of a bag of peanut m&ms. I love oatmeal cookie as a base. And that's how this cookie got started.

chock-full of peanut butter and chocolate flavor, these soft oatmeal cookies have crushed up peanut butter cups, butterfinger eggs, and the rest of that bag of peanut m&ms in them. When I first mixed it all together, I thought I might have too much "stuff" and not enough "dough." But after I baked the first batch, I knew there was no mistake.

These are the best cookie ever. Perfect for any and all peanut butter and chocolate lovers.
