Oat-banana-chocolate protein super healthy "cookies"!

HEALTHY SNACK!
Yes yes, they are. I had some bananas that were perrrfect for baking, and I wanted to use them to make something healthy...a healthy snack!
So check these out, I might even eat them for a quick breakfast on-the-go!

What makes them healthy you ask? Here are the ingredients:
Bananas
unsweetened applesauce (just a little)
Old Fashioned Oats
dried figs, cut up
2 scoops chocolate protein powder (no added sugar)
cinnamon
vanilla

That's it!

The oats for a slow-digesting carb, high in fiber from the figs and oats, protein from the protein powder, a little healthy fat from the protein powder and the oats, and the taste of chocolate!

They were an experiment, so I wasn't sure what to expect, but they actually taste pretty good!! The touch of sweetness from the bananas melds really well with the oats and protein powder! And they're chocolate!!

I wouldn't really call them a cookie, but that's what they look like...I think I'll try them with peanut or almond butter spread on top too :)

Healthy "treat" = success!

And the Oscar goes to...

Peanut butter, Oreos, and Chocolate!!
Since it's such a winning combination of flavors, I decided to use them to bake for the Oscars (as if I really needed a reason)! I made a peanut butter oreo sheet cake and frosted it with chocolate oreo frosting!

They look a littttle sloppy...I was in a rush so the cake wasn't completely cool before I put the frosting on. So that's why it was gooey...
...but oh-so-delicious! The cake was really moist and the frosting was wonderfully chocolaty!!

One thing I love about sheet cakes is that you can cut them into bars ahead of time, making them easier to eat at group gatherings. No need for cutting a cake while everyone waits for a piece, no forks, and really plates aren't even necessary (though it doesn't hurt if you have them)! Also, it makes it so the quantity goes further! I used them for three different things!

(1) I brought some to the Oscars party I went to with my sorority sisters, (2) kept some for me and my roommates, and (3) am bringing the rest to work tomorrow!!

Banana Bundt Breakfast Bread!

Happy Weekend!
We had a lovely potluck senior brunch this morning! I brought this!

It's my usual whole wheat, fat free banana bread recipe, but I wanted to make it look a little more special! Hence, Banana Bundt Bread, dusted with powdered sugar! I suppose you could call it cake...I brought along some honey cinnamon cream cheese frosting to go with it too :)

Yum yum....

End of the Week Treat! V-day themed!

Happy Friday!
This week's End of the week treat = cookies!
Oatmeal Chocolate Chip M&M Peanut Butter Cookies, to be exact!!
With Valentine's Day M&Ms of course, because, well, you can never have too much love...right?

The base is made up of about half flour and half oats, and I decided to use whole wheat flour instead of all-purpose. Why? Why not?! Certainly can't call them healthy cookies, but might as well add nutritional benefits where I can!


High in protein and fiber, soft, chewy, and chocolaty! I'll take it! :)

Banana Cupcakes with Honey Cinnamon Cream Cheese Frosting!!

Happy (almost) Valentine's Day!

Which for me is basically just an excuse to make baked goods that are heart shaped, love-themed, or red & pink!

So these cupcakes aren't actually very Valentine's Day-y, BUT I happened to have a lot of bananas that were in need of being used in some sort of baking. So why not try out some banana cupcakes?! Frosted with honey cinnamon cream cheese frosting (which is as decadent as it sounds), and topped with a conversation heart, of course, to make it festive :)

^^I'm bringing this dozen to work... ^^

...giving some to friends for their birthdays....

...and keeping some for me and my roommates!

SO, I made chocolate peanut butter cookies with chocolate chips and peanut butter chips. Bringing them to work, to a reunion potluck, to a sorority retreat...lots of places to bring along baked goods for peeps!

I tried something new, and I am officially addicted to them! Think, fudgy, chocolate chunk brownies with layers of peanut butter oreo swirl. OM NOM! You gotta see this...



As you've probably gathered from reading through my blog, I am basically obsessed with peanut butter, oreos, and chocolate...

Banana chocolate chip muffins anyone?!


Happy Friday!
In keeping with my goal of baking at least one treat per week, I chose to make a good ol' fav of mine- banana chocolate chip muffins. BUT, with a slightly healthy twist: 100% whole whole and IF they didn't have chocolate chips, they'd be fat-free. So think of it as a nutritious banana muffin, with a kick of chocolate and a sprinkling of turbinado sugar on top.

Mini-sized, cute, you can just pop 'em in your mouth! The perfect balance, right?
No one can ever tell that they are whole wheat and have a fat-free batter!
